Our first journey
Where Winemaking Began, Georgia
Taste. Learn. Make. Bottle.
A small-group journey into Georgian natural wine culture, shaped by Adrian Scoffham’s winery experience and established relationships in Georgia.
Why Georgia?
Georgia’s natural winemaking traditions bring together much of what we value: stewardship of the land, the preservation of endemic grape varieties, knowledge passed between generations, and a deep love of the process.
Our interest lies with growers and makers whose work reflects these values. Through their practices, we explore what sustainability means in everyday decisions, how local traditions remain alive, and how wine connects people to land and to one another.
We want to experience wine as something to make, understand, and share. A place at the table begins with curiosity. Food, conversation, and participation bring us closer to the craft and the people behind it.
This is Simple Is More in practice: making room for care, connection, and the satisfaction of creating something together.
The experience
Visit family and small-scale wineries, taste local wines, and learn alongside winemakers. Explore the connections between wine, land, food, history, and hospitality, including an introduction to qvevri, the earthenware vessels used in traditional Georgian winemaking.

Explore Georgian wine history and culture through tastings, shared meals, and conversations with local winemakers. Discover endemic grape varieties and the traditions that give these wines their character.

September 2027
Return during the harvest season to learn through practical participation with local makers. Explore how grapes become wine, with activities shaped by harvest timing, seasonal conditions, and our winery partners.

April 2028
Explore how wine develops and is prepared for bottling, with opportunities to learn and participate alongside our winery partners.
Each stage is planned as a complete experience in its own right. Joining all three offers a deeper understanding of the winemaking cycle and a chance to build relationships with the place and its people over time.
